Seasonality is at the heart of our business. With a new season, comes a new menu. Here is a snap-shot at what your autumn/winter menu might taste like if you work with our team.

Cauliflower pannacotta with smoked lamb loin and toasted rosemary crumb

Confit of duck lollipops with cornmeal and bitter orange sauce

Parsnip rosti with smoked halibut in a citrus marinade topped with caviar

Lancashire curd cheese pastry with truffle honey infused beetroot jelly (v)

Roast acorn squash with salted ricotta cream

MAIN COURSE

 

Roasted Aylesbury duck breast with cardamom and duck jus pouring pots

Dauphinoise potatoes, caramelised radicchio and charred leeks

 

Sautéed wild mushroom with sorrel and grilled polenta

Puy lentils and heritage carrots (v)

 

DESSERT

 

Carrot cake with passionfruit macerated carrot ribbons

Whipped cream cheese and passionfruit
